Aubergine With Tahini Paste And Date Syrup

Ingredients

Aubergine

Tahini paste

Date syrup

Pomegranate seeds

Parsley

Method

Roast the whole aubergines for an hour and a half on a high heat until soft, rotate them from time to time.

Cut the bottom off and stand them up on a net to drain all the fluid. Then place on plate and cut open (like a fan). Once ready you can drizzle tahini paste and drizzle date syrup. Sprinkle pomegranate seeds and add parsley as garnish.
